Traditional gin follows the classic London Dry template that took shape in London through the eighteenth and nineteenth centuries. It grew out of Dutch genever once English distillers moved to cleaner column still spirit and began redistilling with botanicals. The result is a dry, crisp style where juniper leads, citrus lifts the nose, spice sits in the background, and the finish is clean and brisk. London gave the style its name, but the method is used worldwide today. Traditional gin is built for a straight G and T, a dry Martini, a Tom Collins or a Negroni.

Classic botanicals you can expect include juniper berries, coriander seed, angelica root, orris root, lemon peel, bitter orange peel, sweet orange peel, cassia bark or cinnamon, licorice root, almond, grains of paradise, cardamom and nutmeg.
