Brotginsky comes from Upper Austria and from a genuinely unusual idea: rather than waste it, organic distiller Josef Farthofer takes dried, crushed old bread from the Aschauer bakery and turns it into spirit. He mashes, ferments, distils and refines those stale loaves with fifteen botanicals, an upcycling project that reads like a quiet protest against waste. Baking craft meets distilling craft, and the result is a true rarity.
The nose offers fresh juniper with delicate citrus and a fine herbal edge. The palate is full-bodied and balanced, intense juniper rounded out by subtle herbs and a light citrus freshness, the bread base lending body without any obvious flavour of its own. The finish is long, herbal and gently spiced. Pour it into a classic gin and tonic, or stir it down into a Negroni.
