Herbal

Herbal gin keeps juniper first and brings a fresh green lift from garden herbs and wild botanicals. The style grew as distillers moved beyond citrus and spice into savoury and aromatic plants. To keep flavours clear, many run short macerations, vapour infuse delicate leaves, or blend fresh distillates back into a dry base. Herbal gin gives a dry profile with clean green notes, bright citrus on the nose, and a crisp finish.

Classic botanicals include rosemary, thyme, basil, sage, bay, lemon balm, mint, fennel, dill, pine needles, spruce tips, coriander seed, angelica root and orris root, with light background spice.
