Wildstueck distils along Austria's Danube, and this gin is an argument for juniper in its plainest, most original form. The recipe pairs classic juniper with local botanicals: rosemary, lemon verbena and lavender for a herbal, floral frame, with a subtle hint of apricot for fruity lightness. Crucially it is left unfiltered, a deliberate choice that keeps the full weight of the botanical oils in the bottle and the character unpolished and authentic.
The nose is fresh juniper over herbal notes, floral nuances and a touch of apricot. The palate is dry, elegant and balanced, juniper meeting rosemary and lavender with gentle citrus, before a long, lightly spiced finish carrying herbal freshness. Pour it neat to read the botanicals fully, or build a gin and tonic with a Mediterranean tonic and a sprig of rosemary.
