Description
Redbreast is Irish Distillers' benchmark single pot still range, distilled at the Midleton distillery in East Cork from a mash of malted and unmalted barley. This PX Edition belongs to the Iberian Series, a set of no age statement bottlings that lean on fortified Spanish wine casks, released in 2021.
The whiskey matures in ex-bourbon and Oloroso sherry casks before a finishing period in Pedro Ximenez hogsheads, the sweetest of the sherry styles. That final cask pushes the profile toward raisin, cooked fruit and dark chocolate, wrapped around the creamy, gently spiced texture that unmalted barley gives pot still whiskey. Bottled at 46% for a fuller mouthfeel and offered globally.
