Redbreast

Redbreast traces its roots back to the late 1800s, when it was bottled and sold by W&A Gilbey, a Dublin-based wine and spirits merchant (a bonder). They sourced spirit from Jameson’s Bow Street distillery and matured it in their own sherry casks, eventually branding the whiskey as “Redbreast” — a nod to the robin, a favourite bird of Gilbey’s chairman. Though the bonder system faded, Redbreast survived and was later revived by Irish Distillers, now produced at Midleton using the same traditional single pot still method.

Today, Redbreast sits at the heart of the Irish whiskey renaissance. Its core range — 12 Year Old, 15, and Lustau Edition — offers rich, oily textures with a balance of spice and fruit. But the brand has also pushed into more ambitious territory, with releases like the cask strength expressions, the 21 Year Old, and the highly sought-after Dream Cask series consisting of ultra-aged single pot stills matured in hand-selected barrels.
