Description
This Redbreast Dream Cask is a 20 Years Old Pedro Ximénez edition, single cask 374932, bottled in 2019 in a run of 924 half litre bottles for the Irish market. The Dream Cask series draws rare Redbreast stock for one off releases. It is a single pot still, malted and unmalted barley triple distilled at Midleton in East Cork.
The whiskey matured in bourbon and Pedro Ximénez casks before being married together in a PX cask, the sweet, syrupy sherry lending raisin, fig and dark chocolate over the pot still spirit. Bottled at 52.2% and undiluted, it is rich and unctuous, twenty years of ageing carrying the PX depth on the pot still's oily spice.
