This Redbreast Dream Cask was distilled at Midleton in 1985 and bottled in 2018 at 32 years old, cask 41207, a run of 816 half litre bottles for the Irish market. The Dream Cask series releases some of the oldest single pot still stock held by Irish Distillers. Redbreast is built on malted and unmalted barley triple distilled in East Cork.
The spirit matured in a bourbon barrel before finishing in an Oloroso sherry butt, three decades of wood giving leather, old oak and dark chocolate over dried fruit. Bottled at 46.5%, it stays oily and sherried, the pot still character deepened rather than lost across thirty two years. Whiskies of this vintage from Midleton are rare survivors.
