Redbreast 21 Years Old sits near the top of the range, a single pot still whiskey given twenty one years in wood at the Midleton distillery in Co. Cork. Triple distilled from malted and unmalted barley by Irish Distillers, it is bottled at 46% for the European market.
Maturation is led by ex-bourbon oak, and in the Redbreast house style a share of Oloroso sherry typically joins it, the long ageing drawing out toasted oak, chocolate, tobacco and a malty depth over vanilla. Time smooths the peppery pot still spice into something rounder while keeping the oily texture intact. An older, contemplative pot still whiskey where wood and spirit have had two decades to settle.
