Part of La Maison du Whisky's New Vibrations collection, this Redbreast was distilled at Midleton in 2000 and bottled in 2023 at 22 years old, single cask 32336, a run of 564 for France. Redbreast is Midleton's flagship single pot still, distilled in East Cork from malted and unmalted barley and triple distilled for its creamy, spicy character.
A first fill Oloroso sherry cask matured the whiskey, the active wood giving a full sherry profile of dried fruit, walnut and dark chocolate. Bottled at cask strength, 58.3%, it is deep and undiluted, twenty two years of ageing carried on the pot still's oily, peppery core. First fill casks impart the strongest sherry influence, and here it defines the whiskey.
