A single cask release for the Australian market, this Redbreast 19 Years Old comes from Oloroso sherry cask 10755, bottled in 2021 in a run of 558. Redbreast is Midleton's flagship single pot still, distilled in East Cork from malted and unmalted barley and triple distilled for the range's creamy, spicy weight. Single cask bottlings show the whiskey unblended, one vessel at a time.
Nineteen years in a single Oloroso cask build a deep, sherried profile of dried fruit, dark chocolate and honey, the wood's influence unbroken. At 60.9% it is intense and undiluted, the pot still's oily, peppery grip carrying the sweetness. Water is welcome at this strength, releasing the toasted, sherried notes without losing the full Cork texture.
