Redbreast 16 Year Old Cask #37560

Part of Redbreast's single cask programme, this 16 Years Old was drawn from a single Oloroso sherry cask, number 37560, and bottled at cask strength in 2021 for an event. Just 654 bottles were filled. Redbreast is Midleton's benchmark single pot still, distilled in East Cork from malted and unmalted barley and triple distilled for its creamy, spicy weight.

Full sherry maturation gives this cask a deep, dried fruit character, fig, raisin and walnut wrapped in dark chocolate. At 57% and undiluted, it is rich and concentrated, the Oloroso's nuttiness meeting the pot still's peppery, oily grip. Sixteen years of single cask ageing make each bottling distinct rather than a blend of many casks.
