Bottled in 2018, this Redbreast 16 Years Old is an all sherry single cask, cask 10351, distilled at Midleton in 2002 and released for the Irish market in a run of 570 bottles. Redbreast is the benchmark single pot still range from Midleton in East Cork, distilled from malted and unmalted barley and triple distilled for the range's signature spice.
Full maturation in an Oloroso sherry cask concentrates the whiskey into dried fruit, walnut and dark chocolate, the sherry left to dominate without a bourbon counterweight. At 58.7% and undiluted it is dense and warming, the pot still's oily, peppery core holding against the fruit. Single cask bottling keeps this expression individual, a single vessel captured at sixteen years.
