Description
Redbreast is the benchmark single pot still range from Midleton in Co. Cork, the East Cork distillery at the heart of Irish Distillers. This is the cask strength expression of the 12 Years Old, released as batch B2/19 in 2019 and bottled without dilution for the Irish market. Single pot still means a mash of malted and unmalted barley distilled in copper pots, the unmalted grain giving the peppery, oily prickle that defines the style.
Maturation runs through ex-bourbon barrels and Oloroso sherry casks, the bourbon lending vanilla and the sherry dried fruit and walnut. At 55.8% the whiskey is full and warming, with dark chocolate, honey and cooked orchard fruit over a firm spine of clove and fresh oak. Triple distillation keeps the texture silky despite the strength.
