Batch B1/21 is a cask strength release of Redbreast 12, the twelve year old single pot still that stands as the benchmark of its style, distilled at Midleton in Co. Cork by Irish Distillers. Bottled in 2021 at 56.3% without dilution, it shows the whiskey with all its weight intact, the extra strength giving the sherried pot still profile more depth and grip than the standard forty percent version.
Ex-bourbon barrels and Oloroso sherry casks build the whiskey together, the American oak giving vanilla and honey, the Oloroso dried fruit, walnut and dark chocolate. Fresh and cooked orchard fruit run through, with a note of old oak and the range's creamy, oily texture. Undiluted, the single pot still spice of clove, ginger and pepper is concentrated and long, opening on water into a rich, Christmas cake finish. Triple distilled and unpeated.
