Description
Redbreast 12 Cask Strength is the undiluted counterpart to Midleton's flagship single pot still, released here as batch B1/16 in 2016 for global distribution. The distillery, opened in 1975 in East Cork, is the engine room of Irish Distillers, and its pot still whiskey is built on a mash of malted and unmalted barley triple distilled in copper.
This batch leans on ex-bourbon American oak, which frames the spirit with vanilla, soft toffee and fresh orchard fruit rather than heavy sherry. At 57.2% it is powerful and creamy, cooked fruit and dark chocolate riding the pot still's peppery, gingery spice. Water opens it, though the texture stays oily and full in the house Cork style.
