Description
This Drumshanbo single pot still comes from The Shed distillery in Co. Leitrim, the Leitrim site founded by PJ Rigney in 2014, and was finished in Pinot Noir wine casks for the Irish market. It is a NAS bottling built on the distillery's heritage pot still mash of malted and unmalted barley with oats.
The Pinot Noir cask brings soft red fruit and a light tannic lift over honey and fresh orchard fruit, while a husky, cereal graininess and gentle yeasty note recall the young spirit beneath. Triple distilled and bottled at 43%, it stays bright and easy, the wine cask colouring rather than dominating the pot still character.
