Description
This was the inaugural single pot still release from The Shed distillery in Drumshanbo, Co. Leitrim, PJ Rigney's Leitrim site opened in 2014. Distilled in 2014 and bottled in 2019 as a 5 Years Old, it drew on the distillery's heritage mash of malted and unmalted barley with a portion of oats, and appeared as a run of 12,000 bottles for Europe.
The spirit matured in a mix of ex-bourbon and Oloroso sherry casks, the bourbon oak lending vanilla and toasted notes while the sherry adds dark chocolate and dried fruit depth over the fresh orchard fruit. Triple distilled and bottled at 46%, it shows the peppery, creamy pot still texture that is the Irish signature.
