Description
The third of Dingle's annual Single Pot Still releases, bottled in 2019 for the Irish market in an edition of 3,400. The Co. Kerry distillery triple distills a mash of malted and unmalted barley for these bottlings, working in the historic Irish style that the new distilling wave has brought back to life.
Bourbon barrels and Port casks share the maturation. Honey, vanilla and dried fruit lead, with fresh oak and a savoury, rooty depth beneath the peppery pot still spice. Bottled at 46.5% without chill filtration, it keeps the creamy texture the unmalted barley gives, with the mild Atlantic maturation of the Dingle peninsula rounding the edges.
