Dingle's core Single Pot Still bottling, here in its 2025 release, made from a mash of malted and unmalted barley triple distilled on the Co. Kerry distillery's small copper pots. After a run of numbered annual releases, the style settled into this permanent expression, the house's answer to Ireland's own signature whiskey category.
The recipe is precise: 59% bourbon casks and 33% Oloroso sherry, with 4% Pedro Ximenez and 4% red wine casks as seasoning. Bourbon oak keeps green apple, barley sugar and vanilla up front while the sherry and wine wood add dark fruit behind, and the unmalted barley delivers the peppery, gingery bite and oily texture of true pot still whiskey. Bottled at 46.5% without chill filtration, matured in the Atlantic air of the peninsula.
