Description
Batch No. 5 marks the point where Dingle's single malt moved from occasional small batch releases to a permanent core bottling. Released in 2020 at 30,000 bottles, it is triple distilled at the Co. Kerry distillery and matured in the damp Atlantic air of the Dingle peninsula, where the mild, salty climate is credited with the softness of the house spirit.
The vatting brings together bourbon, Pedro Ximenez sherry and Madeira casks. Honey and fresh orchard fruit sit up front, with hay like cereal notes behind and the wine casks adding a leathery, gently mossy old wood depth beneath. Bottled at 46.5% without chill filtration, it set the template the core Dingle single malt still follows.
