Description
Dingle's second small batch single malt, bottled in 2017 for the Irish market in an edition of 6,000. These early numbered batches were the first widely available whiskey from the Co. Kerry distillery, which began distilling in 2012, and each paired the young triple distilled malt with a different cask recipe.
Batch No. 2 leans on sherry: Pedro Ximenez and Oloroso casks alongside bourbon wood. Chocolate and dried fruit sit over fresh green fruit, cut grass and a hay like cereal note, the marks of a young malt still close to the barley. Bottled at 46.5%, it reads today as a snapshot of the distillery finding its sherried register, matured in the mild Atlantic climate of the peninsula.
