Description
The second Single Pot Still release from The Dingle Whiskey Distillery, bottled in 2018 for the Irish market in an edition of 3,000. Dingle, distilling in Co. Kerry since 2012, was among the first of the new Irish distilleries to revive the country's own pot still style, a mash of malted and unmalted barley run three times through its small copper stills.
The vatting draws on bourbon, Oloroso and Pedro Ximenez sherry casks. Bourbon wood keeps the green apple, barley sugar and baking spice of young pot still whiskey to the fore, while the two sherries deepen it with fig and raisin. Bottled at 46.5%, it shows the peppery bite and creamy, oily texture the unmalted barley brings to the mash bill.
