Description
Grianstad an Gheimhridh is Irish for the winter solstice, and this 2023 bottling marks the year's shortest day in the Wheel of the Year series, Dingle's run of cask strength releases tied to the old Celtic calendar. It is a triple distilled single malt from the Co. Kerry distillery, released in an edition of 7,800 bottles, each entry in the series pairing a festival with its own cask recipe.
The whiskey starts in ex-bourbon casks and takes a finishing period in Tawny Port wood, which folds dried fruit, cooked apple and a winey sweetness into the malt's honey and vanilla. Bottled undiluted at 50.5%, it keeps the fresh fruit and malt extract depth of the house spirit, matured in the Atlantic air of the Dingle peninsula.
