The fourth Single Pot Still release from The Dingle Whiskey Distillery in Co. Kerry, triple distilled from a mash of malted and unmalted barley on the town's small copper pots. Dingle fired its stills in 2012, early in Ireland's new wave of distilling, and these annual pot still editions chart the house working through the country's own historic style, with 8,000 bottles in this 2020 release.
Maturation splits between 75% first fill bourbon casks and 25% first fill Oloroso sherry butts. The bourbon wood lays down vanilla and milk chocolate while the Oloroso adds fig and raisin over the peppery, gingery prickle the unmalted barley brings. Matured beside the Atlantic on the Dingle peninsula and bottled at 46.5%, it carries the soft maritime roundness that runs through the house style.
