The fourth cask strength single pot still release from Dingle was drawn from first fill casks, 75% ex-bourbon and 25% Oloroso sherry, and bottled in 2020 at 59.9% in a run of only 500 bottles for the Irish market. The spirit is the Co. Kerry distillery's mash of malted and unmalted barley, triple distilled in small pots.
First fill wood works fast, and the bourbon barrels load vanilla and toasted coconut while the Oloroso quarter threads walnut and dried fruit through the pot still spice, clove, pepper and ginger on an oily, waxy palate. At full strength it is intense and warming, and water coaxes out barley sugar and baked orchard fruit, an early landmark in the distillery's pot still story.
