Dingle's single pot still releases chart the Co. Kerry distillery's progress with Ireland's native style, a mash of malted and unmalted barley triple distilled in its small copper pots. This is the cask strength version of the fifth release, bottled in 2022 at 59.5% in a run of 1,000 bottles for Europe.
Maturation in ex-bourbon casks keeps the wood in service of the spirit, vanilla and light oak framing the green apple, black pepper and gingery prickle that unmalted barley brings, with the oily, mouth coating texture the style is prized for. Undiluted, the spice arrives with real momentum, and a splash of water opens it into creamy barley sugar, pot still whiskey from the Atlantic edge at full voice.
