Bealtaine is the old Irish festival of fires that opens summer, and it lends its name to this entry in Dingle's Wheel of the Year series, seasonal releases pegged to the Celtic calendar. It is a single pot still whiskey, made in Co. Kerry from malted and unmalted barley, bottled in 2023 in an edition of 5,500 bottles for Europe.
Ex-bourbon maturation is warmed with a finish in Shiraz wine casks, and the red wine speaks clearly, cooked and dried fruit, chocolate and a sherried richness folding into citrus and the fragrant, peppery spice of the pot still mash. Bottled at a cask strength of 52.5%, it is one of the more flamboyant pot still whiskeys the distillery has released, a fireside dram named for a fire festival.
