Bourbon casks and nothing else shaped this 2015 vintage Dingle, a single malt distilled in the Co. Kerry stills and bottled in 2024 at 8 Years Old, 264 bottles for Germany. With no wine cask in the picture, it is the clearest look this vintage series offers at the distillery's own spirit.
American oak lays down vanilla, honey and coconut and then steps back, leaving the triple distilled malt to show its orchard fruit, barley sweetness and the faint maritime breath of warehouses a stone's throw from the Atlantic. Bottled at a cask strength of 59.2%, it takes water well, unfolding toward baked apple and cream, house character with the volume turned up.
