Cognac casks are still an uncommon sight in Irish warehouses, and this 2015 vintage Dingle single malt takes a finish in them after initial maturation in ex-bourbon barrels. Distilled in the small pot stills at Dingle in Co. Kerry, it was bottled in 2023 at 8 Years Old for the German market as part of the distillery's vintage cask series.
The Cognac wood folds dried apricot, white grape and a gentle rancio warmth over the vanilla and honey laid down by the bourbon barrels, a graceful pairing for a triple distilled spirit that leans naturally toward orchard fruit.
