Ten years old and drawn entirely from Pedro Ximenez casks, this 2014 vintage sits among the more mature releases Dingle has bottled, spirit distilled in the Co. Kerry distillery's third year of operation and released in 2025 for the Netherlands in a run of 305 bottles.
A decade in PX wood is a long conversation, and the sherry casks answer with raisin, walnut, dark chocolate and a balsamic edge over the honey and orchard fruit of the triple distilled house spirit. Bottled at a cask strength of 57.5%, it shows what patience does at a young distillery, the extra years rounding the oak and letting the sweetness settle into something quieter and darker.
