Redbreast 12 Years Old is the benchmark single pot still whiskey, and this is an older bottling under Gilbeys of Ireland Ltd., the wine and spirit merchant that bonded Redbreast for decades. The pot still spirit came from the John Jameson house at Bow Street in Dublin, matured and married by the bonder in the old bonding tradition that predates the modern brand.
Twelve years in ex-bourbon casks give vanilla and honey over a mash of malted and unmalted barley, the unmalted portion driving the green apple, clove and gingery pepper that mark single pot still. Bottled at 40%, it keeps the creamy, faintly oily texture that made Redbreast the reference point for the style.
