Yoichi Single Malt Sherry Wood Finish is a no age statement expression from Nikka's Yoichi distillery on the Sea of Japan coast of Hokkaido, owned by Asahi. Released globally in 2018, it follows the same format as the other wood finish releases in the Yoichi lineup: Ex-Bourbon matured spirit given additional time in a sherry cask to layer a secondary influence over the base character.
The recorded tasting note is primarily hay-like and dry, suggesting the sherry influence here is restrained and leans toward the lighter, drier end of the style rather than full Oloroso richness. Typically for a sherry-finished Yoichi, light dried fruit and a gentle spice come alongside the maritime malt and coastal qualities the distillery is known for through its coal-fired direct distillation.
