Yoichi Single Malt Aromatic Yeast is a no age statement release from Nikka's Yoichi distillery, set on the Sea of Japan coast of Hokkaido and owned by Asahi. The bottling explores how yeast selection shapes character, sitting alongside the distillery's established peaty and woody expressions and bottled at 48% cask strength.
Matured in Ex-Bourbon casks, the spirit shows cooked fruit, fresh fruit and vanilla alongside a distinctly yeasty, malt extract quality that sets it apart from the typical Yoichi smoke and brine. The coal-fired direct distillation at Yoichi gives the spirit its signature weight and oiliness, which carries through even when the peat takes a back seat.
