Description
This is a single cask single pot still whiskey from Walsh Whiskey in Co. Carlow, cask number 86870, bottled in 2024 for an event in a run of 700 bottles. Single pot still is Ireland's own style, distilled from a mash of malted and unmalted barley for its hallmark spice. The cask had an unusual double life, an Oloroso sherry oak butt that was then filled with gruit stout from Dick Mack's in Dingle before this whiskey went in.
The sherry oak brings dried fruit and walnut, while the gruit stout imprint adds dark chocolate, coffee and a herbal, faintly bitter edge. At 56.45% and bottled at cask strength, the whiskey is powerful and layered, the pot still pepper and oily texture holding up to the rich finish. Water tempers the strength and draws out the roast notes.
