This is Chapter 10 of the Writers' Tears Single Pot Still series from Walsh Whiskey in Co. Carlow, bottled in 2021 in a run of 5,800. Single pot still is Ireland's own category, distilled from a mash of both malted and unmalted barley, which gives the style its hallmark peppery spice and creamy, oily texture. It carries no age statement.
Three cask types shaped this whiskey, ex-bourbon American oak for vanilla and honey, Pedro Ximenez sherry for dark dried fruit, and Florio Marsala for nutty, raisined sweetness. Bottled at 46%, it is smooth yet lively, orchard fruit and sherried depth meeting the green, leafy prickle of the pot still spirit. A well balanced turn on the modern pot still.
