This is the 2021 outturn of Writers' Tears Cask Strength, the annual undiluted bottling from Walsh Whiskey in Co. Carlow. Like every Writers' Tears it marries single pot still and single malt whiskey without any grain whiskey, and it wears no age statement. The 2021 release ran to 4,500 bottles.
Maturation here was in ex-bourbon casks, American oak that lends vanilla, coconut and a gentle sweetness to balance the spice. Bottled at 54.2% straight from the cask, it is rich and fragrant, the malt bringing honey and orchard fruit while the pot still component adds a dry, gingery grip. Water is welcome but not required.
