Description
West Cork Distillers has worked independently in Skibbereen, Co. Cork since 2003, running its own malt and grain through a famously fast still setup. This bottling is a blend of pot still and grain whiskey, married young and released without an age statement, part of the distillery's ongoing work with beer casks sourced close to home.
The whiskey rests first in ex-bourbon barrels before a finishing period in casks that once held Irish stout. The stout wood pushes roasted, coffee toned notes and a thread of dark chocolate into an otherwise soft, malt led spirit, with the finish kept gentle at 40%. It was bottled in 2024 for the Belgian market.
