Volume II of From Clare To Here is a single cask release from W.D. O'Connell Whiskey Merchants, pairing malt distilled at The Great Northern Distillery in Dundalk, Co. Louth with a stout cask from Western Herd, the brewery in Co. Clare that gives the series its name. Cask 3926208 yielded just 168 bottles, bottled for the German market.
The whiskey began in first fill bourbon wood before taking on the Western Herd stout cask, and the beer barrel leaves a clear signature: dark chocolate, coffee and roasted malt layered over the vanilla and honeyed barley of the bourbon start. Bottled at its full cask strength of 54%, it carries no age statement, letting the cask work rather than a number tell the story, and it finishes long, toasty and faintly bittersweet.
