Bill Phil is the peated series from W.D. O'Connell Whiskey Merchants, built on the peated malt made at The Great Northern Distillery in Dundalk, Co. Louth, and a deliberate outlier in a country that overwhelmingly favours unpeated whiskey. This 2019 release for the Irish market is a single cask edition, one first fill bourbon barrel that gave just 306 bottles.
The whiskey carries no age statement, and the young peated malt wears its smoke brightly, a heathery, campfire note rather than heavy coastal peat. Beneath it the first fill barrel supplies vanilla, soft coconut and sweet barley, with toasted grain filling out the finish. Bottled without dilution at 47.5%, it is a rare chance to taste Irish peat cask by cask, and an early landmark for the series that helped bring smoke back to Irish malt.
