Batch 03 of Bill Phil, bottled in 2021 for an event, is an early instalment in the peated series from W.D. O'Connell Whiskey Merchants. The malt was distilled at The Great Northern Distillery in Dundalk, Co. Louth, where peated spirit runs alongside the unpeated make, and the bonder bottles it in numbered small batches so each release keeps its own character.
Ex-bourbon maturation frames a distinctive profile in this batch: fragrant, herbal greenhouse notes and citrus zest first, then a gently medicinal smoke with toasted grain beneath, closer to smouldering herbs than to tar. It carries no age statement and is bottled undiluted at 47.5%, a strength that holds the aromatics together and gives the young malt an oily, warming grip through the finish.
