Batch 07 of Bill Phil continues the peated series from W.D. O'Connell Whiskey Merchants, the bonder that has made a specialty of the peated malt distilled at The Great Northern Distillery in Dundalk, Co. Louth. Peat remains rare in Irish whiskey, and Bill Phil is released in numbered small batches for the European market, each one a snapshot of young smoky malt rather than a fixed recipe.
Maturation in first fill ex-bourbon casks gives the batch its sweet backbone of vanilla and toasted oak, over which the peat reads as coal smoke and cooked mash, with a nutty, malt extract richness underneath. It carries no age statement and is bottled undiluted at 47.5%, a strength that keeps the smoke vivid while the texture stays creamy, finishing on toasted grain and lingering embers.
