Description
The PX-Series is W.D. O'Connell's running study of Pedro Ximénez casks on Irish whiskey, and this 20 Years Old Cooley single malt is one of its senior entries. Matured in first fill ex-bourbon and PX sherry wood, cask 144102 gave 300 bottles at a natural cask strength of 49.5%, released in 2022.
Two decades of maturation built a whiskey thick with fig, date and honeyed malt, the PX adding dark grape sweetness while the bourbon years keep vanilla and orchard fruit in the frame. At 49.5% undiluted it is concentrated without being hot, finishing on raisin, walnut and gentle oak. The double distilled malt Cooley makes in Co. Louth has the fruit to carry heavy sherry, and this bottling shows why the pairing became a signature for the bonder.
