Description
W.D. O'Connell bottles single casks in the bonder tradition, crediting the source openly, and this limited release grain comes from Cooley in Co. Louth. Column distilled and matured 15 years in a bourbon barrel, it took a finishing period in Oloroso sherry wood before bottling as single cask 305616 at an undiluted 62.5%.
The grain spirit's natural sweetness, toffee, coconut and soft banana, meets walnut, raisin and a savoury sherry depth from the Oloroso, an unusually muscular frame for Irish grain whiskey. At full cask strength the delivery is intense and warming, and water unlocks butterscotch and dried fruit without thinning the texture. Aged single grain remains one of Irish whiskey's quiet bargains, and cask strength examples like this are scarce.
