Description
Le Rocher is one of Velier's Haitian clairins, made the traditional village way with wild fermentation, here distilled on a pot still from sugar cane honey, the concentrated cane syrup, rather than fresh juice or molasses. That base and that ferment give it a wild, distinctive personality.
Bottled unaged at 50%, it is oily and savoury through and through. The nose runs to olive, meaty and funky notes over solvents, while the palate turns vegetal, grassy and smoky with a slick, oily texture. The finish carries herbs, olive, ripe fruit and a meaty echo. This is a bold, original white rum rather than a soft one, smoky and herbal where many clairins lean tropical. Honest and characterful, it offers genuine depth for the money and rewards both neat sipping and a place in a distinctive cocktail.
