Description
This Vieux Sajous comes from the Chelo distillery via Velier, an aged take on one of Haiti's celebrated clairin profiles. Unusually it is built from sugarcane honey, a concentrated cane syrup, rather than fresh juice or molasses, distilled on a pot still with the wild character that defines Haitian rum, then matured around five years in ex-bourbon oak.
The wood rounds the spirit without taming all of its intensity. The nose carries fresh sugarcane, honey and a vegetal lift, the palate sugarcane and honey over oak with a fresh edge, and the finish citrus, oak, allspice and more cane. Beneath it run the herbal, meaty and smoky notes that mark the style. Unsweetened and bottled at 59.5%, this is a complex, characterful sipper, the funk softened by age but still present, best given air and time to settle.
