A soft, approachable Prosecco from V8+ in south-eastern Veneto, made entirely from Glera in the Extra Dry style. Acacia blossom, ripe peach and juicy pear carry a gently fruity palate with a smooth, balanced finish.

Description
V8+ source this Prosecco DOC from the Venetian plain, where alkaline silty clay soils over an old caranto paleosol and the pull between cool bora and warm scirocco winds shape the fruit. After gentle pneumatic pressing the must is quickly run off the skins and fermented at 15 to 16 degrees in stainless steel. Secondary fermentation follows the Martinotti method in pressurised tank for at least thirty days, which keeps the primary fruit intact and sets a fine, steady bead. At around 14 grams of residual sugar this is a true Extra Dry, off dry rather than sweet, with the fruit given a little more roundness.
The wine shows straw yellow with faint green tints and a dense, long lasting mousse. Acacia blossom, ripe peach and pear fill the nose. The palate is soft and fresh with a fruity core and a light spice, closing balanced and smooth. Serve chilled at 6 to 8 degrees in a tulip glass. A natural party and reception pour that also handles light starters, salads and soft cheeses.
