Description
V8+ farm this Prosecco DOC in the plains of Friuli Venezia Giulia, where deep silty clay soils and a cool north-east aspect give slow, even ripening. The grapes are gently pressed for the free run juice alone, then fermented in stainless steel at 14 to 15 degrees. Second fermentation follows the Charmat method in tank over at least sixty days, kept deliberately slow to build a fine and lasting bead, before three to four months resting on the fine lees with regular stirring. At around 3 grams of residual sugar the dosage sits in genuine Extra Brut territory, drier and more linear than most Prosecco.
The wine is pale straw with green flashes and a creamy, persistent perlage. The nose is led by grapefruit and bergamot, backed by white peach and a soft floral hint of acacia. It is very fresh on the palate, with lively acidity, a slender body and a clear mineral thread through a precisely dry finish. Serve well chilled at 6 to 8 degrees in a white wine glass. Good as an aperitif and versatile enough to run through a meal alongside white fish and shellfish.
