Description
V8+ produces this Sandro Prosecco Extra Dry DOC from vineyards on the Venetian plain in south-eastern Veneto, close to the Adriatic. The wine is made only from Glera, grown on silty, clay-rich soil over the region's historic Caranto paleosol. After gentle pressing, the base wine is fermented cool in stainless steel, then a second fermentation by the Martinotti tank method runs for at least thirty days to build a fine, lively perlage while keeping the primary fruit intact. The Extra Dry dosage of around 14 g/l reads as ripe fruit rather than sweetness.
The colour is straw yellow with light green reflections and a dense, fine, long-lasting bead. The nose leads with acacia blossom, ripe peach and juicy pear, joined by green apple, lemon and honeysuckle. The palate is soft and fresh with a fruity centre, closing balanced and smooth. Serve well chilled at around 6 to 8 degrees. It works as an aperitif for larger groups and alongside light salads, fresh cheeses and white fish.
