Description
Decadent Drinks selected this 1998 for its Rum Sponge series, a single cask drawing the Port Mourant marque from the Uitvlugt operation. Bottled unsweetened at full proof, it offers the dry, herbal and woody side of Guyana rather than the sweet, dessert-like one.
Matured in Port casks for twenty-five years, it opens on tea, thyme and herbs, then turns spicy, roasted and woody on the palate, finishing on pepper, herbs and spice. Beneath that run pencil shavings, salt, umami, dark chocolate and tobacco, the savoury register Port Mourant does so well. At 60% it benefits from a little water and plenty of time in the glass. This is a serious, contemplative sipper for drinkers who like their Demerara dry, herbal and deeply woody.
